A web find. Fruity muffin that would be good with nice, fresh peaches! Time to make does not include cooling time. Ingredients:
1/2 cup butter, softened |
3/4 cup sugar |
1 egg |
1/2 cup sour cream |
1 teaspoon vanilla |
1 1/2 cups all-purpose flour |
1 1/2 teaspoons baking powder |
1 cup peach, chopped |
1 cup pecans, chopped (optional) |
Directions:
1. In a mixing bowl, cream butter and sugar. 2. Add egg, sour cream and vanilla and mix well. 3. Sift the flour and baking powder together; stir into creamed mixture until just moistened. 4. Fold in the peaches and pecans if using. 5. Fill greased muffin cups three-quarters full. 6. Bake at 400 degrees fahrenheit for 20 to 25 minutes. 7. Cool in pan 10 minutes. 8. Remove to wire rack to finish cooling. |
