PEACH MOLASSES AND BROWN SUGAR COBBLER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Grand Prairie, Texas in 1994. Ingredients:
3/4 cup unsalted butter |
1-1/2 cups all purpose flour |
1 cup firmly packed brown sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/4 teaspoon ground cinnamon |
1-1/2 cups milk |
1/3 cup dark molasses |
2 eggs slightly beaten |
2 teaspoons vanilla extract |
1 cup chopped pecans |
8 ripe peaches peeled and sliced |
Directions:
1. Preheat oven to 350 degrees then put butter in a baking dish and place in oven to melt. 2. In large bowl stir together flour, brown sugar, baking powder, salt and cinnamon. 3. In another bowl whisk together milk, molasses, eggs and vanilla. 4. Stir milk mixture into flour mixture until well blended then stir in pecans. 5. Remove hot baking dish from oven and pour batter into it. 6. Evenly spoon the peach slices over the batter and return dish to oven. 7. Bake 45 minutes then transfer dish to a rack and cool for 30 minutes. |
