From Grandma Robert's files, circa 1962. Actually very easy to do and quite yummy. Ingredients:
6 canned cling peach halves, well drained |
1/4 cup of crushed vanilla wafers or lady fingers |
2 tsp of peach syrup (i would substitute a splash vanilla syrup instead of the canned peach syrup) |
1/4 tsp of cinnamon |
2 egg whites |
1/4 cup granulated sugar |
1/4 tsp of almond extract |
Directions:
1. Preheat oven to 450 degrees. 2. In a shallow baking dish, arrange the peaches, hollow side up. 3. Crush vanilla wafers with hands, fill centers of peaches with crumbs. 4. Sprinkle first with flavored syrup (or maybe hazelnut liquor?) 5. then sprinkle with cinnamon. 6. Beat egg whites until soft peaks form, gradually beat in sugar, beating well until meringue is stiff, fold in almond extract. 7. top each peach half with this meringue. 8. Then bake them until the tops are golden brown, about five minutes. Watch carefully. |
