This is an easy version of a traditional German dessert. Since it uses canned peaches, it can be made throughout the year Ingredients:
1 cup all-purpose flour |
1/4 cup confectioners' sugar |
1/4 teaspoon salt |
1/2 cup butter, cold |
1 (29 ounce) can sliced peaches in juice |
1 (16 ounce) can sliced peaches in juice |
2 eggs |
1 cup sugar |
1/4 teaspoon salt |
3 tablespoons all-purpose flour |
1 cup sour cream |
Directions:
1. Preheat oven to 425°F. 2. In food processor, pulse flour, confectioners' sugar and salt to combine. Drop in butter and pulse until it forms a dough. Pat into the bottom of an ungreased 11 x 7 x 2 metal baking pan. 3. Drain peaches, pat dry and arrange over the crust; set aside. 4. In a bowl, beat eggs; add sugar, flour and sour cream and beat until smooth. Pour over peaches. 5. Bake 10 minutes. REDUCE heat to 325F; bake 35 minutes longer or until center is set. 6. Store in refrigerator. |
