PEACH JELLY CHEWS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pillar Estate in Fort Worth, Texas in 1988. Ingredients:

2 pounds frozen unsweetened sliced peaches |
3-3/4 cups granulated sugar divided use |
2 tablespoons unflavored gelatin |
2 teaspoons grated lemon peel |
1 tablespoon lemon juice |
oil a square metal pan. |
Directions:
1. In a large pan combine peaches with 1/3 cup water then bring to boil over high heat. 2. Stir constantly then reduce heat and simmer covered stirring occasionally for 12 minutes. 3. Whirl fruit mixture in blender a portion at a time until smoothly pureed then return to pan. 4. In bowl mix 3-1/2 cups of the sugar with gelatin then add to fruit puree. 5. Bring to boil over high heat stirring often then stir and boil 5 minutes then reduce to medium. 6. Stir often until thick enough to leave trail when spoon is drawn across pan about 30 minutes. 7. At once remove from heat then stir lemon peel and lemon juice into peach mixture. 8. Scrape mixture into oiled pan then let candy dry uncovered for 24 hours. 9. On a board coat a 10 square area with remaining 1/4 cup sugar then invert pan to release candy. 10. With a long sharp knife dipped in sugar to prevent sticking cut candy into equal pieces. 11. Coat each piece with sugar then arrange in container with plastic wrap between layers. 12. Seal airtight then store up to 1 month at room temperature. |
