PEACH ICE CREAM This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991. Ingredients:
2 cups finely chopped ripe peaches |
1-1/4 cup granulated sugar |
juice from 1/2 lemon |
2 large eggs |
whipped cream |
1 cup whole milk |
Directions:
1. Peel and pit peaches then chop into a pulp. 2. Combine peaches, 1/2 cup sugar and lemon juice in a bowl. 3. Cover and refrigerate 2 hours stirring mixture every 30 minutes. 4. Remove peach mix from refrigerator and drain juice into another bowl. 5. Return peaches to the refrigerator. 6. Whisk eggs in a mixing bowl until light and fluffy. 7. Whisk in remaining sugar a little at a time then continue whisking until completely blended. 8. Pour in cream and milk then whisk to blend then add peach juice and blend. 9. Transfer mixture to an ice cream maker and freeze following manufacturer's instructions. 10. After the ice cream stiffens add the peaches then continue freezing until the ice cream is ready. |
