This one requires a small home ice cream machine and a food processor. This takes a while but it's worth it - it tastes really great. Ingredients:
1/2 cup sugar |
1 teaspoon gelatin |
1 teaspoon ground nutmeg |
1/2 cup whole milk |
2 tablespoons corn syrup |
1 1/2 lbs peaches, peeled, pitted, and quartered |
1 cup plain yogurt |
1/2 teaspoon vanilla |
Directions:
1. In a saucepan, combine the sugar, gelatin, and nutmeg. Stir in the milk and allow to stand for one minute. 2. Place the pan over LOW heat and cook for five minutes until the gelatin dissolves, stirring constantly. 3. Remove from heat and stir in the corn syrup. Allow the mixture to cool completely. 4. Use a food processor to process the peaches until they are smooth - you might need to stop and scrape down the sides occasionally during this process. 5. In a mixing bowl, combine the peach puree, the gelatin mixture, the yogurt, and the vanilla and stir well. Cover and chill for 8 hours. 6. Transfer the mixture into the ice cream machine and process according to the appliance instructions. 7. Serve. |
