This salad is easy to prepare and is a pretty accompaniment to any meal, especially on a hot summer day or evening. This delicacy is a perfect part of a menu for a bridal luncheon as it is both popular and pretty. This recipe originally came from a wife of a peach farmer. this recipe was submitted by Clara Eschmann. I found this recipe in Salads Food Writers' Favorites. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use no sugar added peaches. Ingredients:
3 ounces cream cheese, softened |
1/2 cup heavy cream |
1/4 cup mayonnaise |
1 -2 tablespoon lemon juice (depending on sweetness of peaches) |
1 dash salt |
3 cups sliced fresh peaches or 30 ounces sliced peaches, drained |
3/4 cup coarsely chopped pecans |
lettuce leaf |
sour cream or mayonnaise, garnish |
Directions:
1. In a mixing bowl, beat cream cheese and heavy cream until mixture is light and fluffy. Stir in mayonnaise, lemon juice and salt. Gently fold in peach slices and pecans. Pour into a 9x9x2-inch glass dish. Freeze several hours. 2. Remove from freezer 15 minutes before serving. Cut into squares; place each square in center of lettuce leaf on salad plate. Top each with a dollop of sour cream or mayonnaise. |
