PEACH ENCHILADAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pusey Estate in Plano Texas in 1991. Ingredients:
21 ounce can peach pie filling |
8 flour tortillas |
1 teaspoon cinnamon |
1/3 cup butter |
1/2 cup granulated sugar |
1/2 cup firmly packed brown sugar |
1/2 cup water |
Directions:
1. Spoon fruit filling evenly down center of each tortilla then sprinkle with cinnamon. 2. Roll up and place seam side down in a lightly greased baking dish. 3. Bring butter and next three ingredients to a boil in a medium saucepan. 4. Reduce heat and simmer stirring constantly for 3 minutes. 5. Pour over enchiladas then allow to stand 30 minutes. 6. Bake at 350 for 20 minutes. 7. Serve warm with whipped cream or ice cream over top. |
