Something my mom came up with when she had made the custard for banana pudding, and then either didn't have the vanilla wafers or the bananas were too far gone. Anyway, this is a great dessert that is easy! My brother's favorite! Read more !!
Ingredients:
1 angel food cake
1 large can peaches, drained well, or fresh equivalent
1 container cool whip
1 recipe vanilla custard (for homemade banana pudding)
custard
1/3 c flour (scant) or 1/4 c cornstarch
2/3 c sugar
2 c milk, scalded
3 slightly beaten egg yolks
2 t. butter or margarine
1/2 t. vanilla
Directions:
1. Custard:
2. Mix flour and sugar in saucepan.
3. Gradually add scalded milk.
4. Cook over moderate heat, stirring constantly, until mixture thickens and boils.
5. Cook 2 minutes.
6. Add small amount of mixture to slightly beaten egg yolks and mix in. Stir into hot mixture.
7. Cook 1 minute stirring constantly, (Cook only until reaches pudding consistency).
8. Remove from heat. Stir in vanilla and butter.
9. (layer with bananas and vanilla wafers for banana pudding: wafers, bananas, pudding, repeat.)
10. For Peach Delight:
11. Layer in large serving dish: (mom turns the glass cake plate lid upside down and makes a pretty presentation).
12. Torn pieces angel food cake, peaches, custard, cool whip, repeat (2 layers each).
13. Garnish with more peach slices on top layer of cool whip, arranged in sunburst pattern, and chill
