Two summers ago I was in the process of moving across the country, on the last night in my old home I made this salsa out of what was left in my fridge, freezer and garden. Ingredients:
1 cup diced tomato |
1 cup diced cucumber |
1 cup diced frozen peaches - still frozen |
1/ 2 cup diced yellow bell pepper - any color will do |
1 / 2 cup diced red onion |
3 or 4 diced jalapenos - i used 6 = ) |
1 / 2 cup chopped cilantro |
3 tblsp lime juice |
3 tblsp orange marmalade - any preserve would do. |
Directions:
1. Combine all vegetables in a glass bowl and gently mix. Put the marmalade in small glass bowl, heat in microwave till the preserves melt - about 10-15 seconds, add the lime juice and mix well. Drizzle this over the salsa. Mix gently and serve with corn chips. |
