This is a wonderful coffee cake recipe I pulled out of a magazine years ago. It is similar to a peach cobbler but the consistancy of coffee cake. Great recipe. Ingredients:
1 cup butter |
1 3/4 cup sugar |
4 eggs |
3 cups all purpose flour |
1 1/2 tsp salt |
1 1/2 tsp baking powder |
1 can peach pie filling |
icing |
1 1/4 cup confectioner's sugar |
1/2 teaspoon almond extract |
3 to 4 tablespoons milk |
Directions:
1. In a large mixing bowl, cream butter and sugar until fluffy. Add eggs, on at a time, beating well after each addition. 2. Combine the flour, salt and baking powder; add to creamed mixture and beat just until combined. 3. Spread 3 3/4 cups of batter into a greased 15 x10 x1 baking pan. Carefully spoon pie filling to within 1 inch of edges. Spoon remaining batter over filling 4. Bake at 350 degrees for 20-25 minutes, or until toothpick inserted near center comes out clean. (if edges brown too quickly cover loosely with foil) Cool on wire rack. 5. In a small bowl combine icing ingredients. drizzle over coffee cake. |
