This is recipe from Chef GrannyGrit's friend Betty B. Ingredients:
4 chicken breasts |
1 medium onion |
1 1/2 lbs sweet potatoes, sliced |
1/2 cup brown sugar |
1 tablespoon orange juice |
3 tablespoons honey |
16 ounces peaches, canned |
Directions:
1. Preheat overn to 375 degrees. Arrange chicken in covered baking dish. 2. Scatter potatoes, and add salt and pepper to taste. 3. Cover and bake 30 minutes. 4. Mix everything else (except peaches) in a bowl and drizzle over chicken and potatoes. 5. Bake uncovered for 30 minutes. 6. Baste as needed. 7. Drain peaches (sliced) and add to casserole and bake another 30 minutes, basting as needed. |
