Peach Blueberry Skillet Crisp |

It's a snap to make this delicious fruit crisptopped with a mix of crumbled oatmeal-raisin cookies and toasty pecans. From Woman's World Ingredients:
4 tbs butter |
8 oatmeal-raisin cookies,chopped (1c) |
1/4 c chopped pecan pieces |
1-1/2 lbs. peaches,pitted,sliced (4 cups) |
3/4 c white cranberry and peach juice drink,such as ocean spray |
1/3 c granulated sugar |
2 tbs cornstarch |
2 pkgs. (6oz. ea) |
blueberries |
2 tbs confectioners sugar |
whipped cream,optional |
Directions:
1. In 10 nonstick skillet,melt 3 Tbs butter over med. heat. Add cookies and pecans;cook till toasted,2-3 mins. Remove from skillet,reserve. 2. In same skillet,melt remaining 1 Tbs butter over med. heat. Add peaches;cook 2-3 mins. Stir in juice and granulated sugar. Cover, reduce heat to med-low and cook till peaches are almost tender,10-12 mins. 3. Meanwhile stir together cornstarch and 2 Tbs water till smooth. Stir blueberriwes and cornstarch mixture into peach mixture. Cover,cook till fruit is softened and juices are thickened,10-12 mins. Remove from heat,sprinkle with reserved cookie mixture. Let stand 15 mins. Sprinkle with confectioners sugar. If desired,serve with whipped cream. |
