PEACH AVOCADO SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986. Ingredients:
1 fresh peach peeled pitted and diced |
1 small avocado peeled pitted and diced |
1 tomato peeled seeded and diced |
1/4 cup diced jicama |
3 tablespoons chopped red onion |
2 tablespoons chopped fresh cilantro. |
1/4 teaspoon crushed red pepper flakes |
3 tablespoons fresh lime juice |
2 teaspoons olive oil |
Directions:
1. In medium bowl mix together peach, avocado, tomato, jicama, onion and cilantro 2. Whisk together pepper flakes, lime juice and oil then pour over peach mixture and stir gently. |
