This is a recipe I obtained from an estate sale in the early 80's. I have made this on several occasions and it is incredible. It's especially good in the summer time with homemade peach ice cream. Enjoy
Ingredients:
3 pounds peaches
1 cup granulated sugar
1 teaspoon granulated sugar
2 tablespoons cornstarch
2 teaspoons lemon juice
1 pint fresh raspberries
1-1/2 cups all purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
5 tablespoons butter chilled
2/3 cup milk
Directions:
1. Preheat oven to 400 then peel and slice peaches.
2. Combine peaches with 3/4 cup sugar, cornstarch and lemon juice then gently stir in raspberries.
3. Transfer to baking dish then cover with foil and bake 30 minutes.
4. Meanwhile combine 1/4 cup sugar, flour, baking powder and salt.
5. Cut in butter until mixture resembles coarse meal.
6. Stir milk into flour mixture until ingredients just hold together.
7. Drop eight heaping spoonfuls of dough onto hot fruit and sprinkle remaining sugar on dough.
8. Bake uncovered until biscuits have browned about 25 minutes.
