PEACH AND GINGER PRESERVES

A recipe that makes a wonderful peach preserve that can be used not only on toast but on pancakes, waffles, french toast or crepes.
Ingredients:
10 cups peaches
5 cups sugar
1/4 cup lemon juice
3 tablespoons ginger
Directions:
1. Peel, chop and crush peaches in layers.
2. Place into a glass or ceramic bowl with sugar and lemon juice. Let stand for about an hour.
3. Place into stainless steel or enamal pot and cook on high. After 15 minutes add the ginger. Cook a further 15 minutes or until a drop of the liquid does not run like syrup down a tilted plate.
4. Place into sterilized jars.
