PEACE HUEVOQUILES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Darwin Estate in Allen, Texas in 2001. Ingredients:
1 cup red tomato salsa |
1 cup heavy cream |
4 cups tortilla chips |
1/4 cup grated manchego cheese |
1/4 cup grated cotija cheese |
1/4 cup grated cheddar cheese |
1 tablespoon unsalted butter |
4 large eggs |
4 teaspoons sour cream |
Directions:
1. Combine salsa and cream in a saucepan and bring to a boil. 2. Add corn chips and reduce heat then simmer stirring frequently for 15 minutes. 3. Stir in grated cheese and remove from heat. 4. Melt butter in large nonstick skillet then fry eggs sunny side up just until set. 5. Ladle chip mixture into bowls and top each with a fried egg and 1 teaspoon sour cream. |
