Usually, hummus is made from chickpeas, but this version uses green peas, which are packed with Resistant Starch and fiber. Ingredients:
1 cup frozen peas, thawed |
4 tablespoons chopped walnuts |
2 tablespoons fresh lemon juice |
1 garlic clove, minced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
8 rye crispbread crackers |
Directions:
1. Combine first 6 ingredients (through pepper) in a blender or food processor; process until smooth. 2. Serve with crackers. |
