Pea Soup With Cilantro

A quick simple soup using frozen peas.
Ingredients:
2 tablespoons oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 teaspoon ground coriander
1 vegetable stock cube
2 1/2 cups boiling water
12 ounces frozen peas
1/2 cup cream
2 tablespoons cilantro, finely chopped
salt & freshly ground black pepper
Directions:
1. Heat the oil, cook onion and garlic until soft.
2. Add the ground coriander and cook for 1 minute.
3. Dissolve the stock cube in the boiling water and add to the pan with the peas, cook gently for 15 minutes.
4. Liquidise until a smooth puree.
5. Season.
6. Stir in cream and fresh cilantro just before serving.
