Plain pea soup. Smoky flavor can be added with seasonings. Ingredients:
3 cups dried split peas |
1 large onion |
4 large carrots |
5 celery ribs |
4 small potatoes |
3 tablespoons olive oil |
thyme |
salt |
pepper |
Directions:
1. Rinse peas, set aside. 2. Chop all veggies, season with salt, and saute in olive oil. 3. Add peas and 2 quarts water. 4. Cook until done. 5. Puree, adjust seasonings. |
