Pea Soup--No Meat

Plain pea soup. Smoky flavor can be added with seasonings.
Ingredients:
3 cups dried split peas
1 large onion
4 large carrots
5 celery ribs
4 small potatoes
3 tablespoons olive oil
thyme
salt
pepper
Directions:
1. Rinse peas, set aside.
2. Chop all veggies, season with salt, and saute in olive oil.
3. Add peas and 2 quarts water.
4. Cook until done.
5. Puree, adjust seasonings.
