This is a modified version of my Mom's Pea Soup recipe - minus the ham bone, and made for the crock pot. It could easily be further modified to be vegetarian with the substitution of vegetable broth instead of chicken broth. Ingredients:
1 lb split peas |
48 ounces chicken broth |
1 white onion |
5 -6 carrots |
4 stalks celery |
4 garlic cloves, pressed |
1 bay leaf |
1/4 teaspoon thyme |
1/8 teaspoon salt |
1/8 teaspoon ground pepper |
Directions:
1. Finely chop the onion and celery. 2. Cut up carrots. 3. Rinse peas. 4. Add all to crock pot and cover. 5. Cook on high 4-5 hours or on low 7-8 hours. |
