baby pea soup with fresh mint Ingredients:
3 cups peas, frozen |
1 cup chopped green onions |
3 cups chicken stock, low fat |
1 tsp pepper |
4 tsp fresh mint, chopped |
Directions:
1. place chopped onions and peas in a pot with chicken broth 2. simmer 20 min. 3. puree 1/2 in a blender 4. strain through sieve discarding solids 5. puree remaining peas in blender 6. add strained peas 7. heat again 8. place 3/4 cup in a bowl sprinkle with mint and pepper |
