You don't get much more traditional Finnish food than pea soup on every Thurday followed by an oven pancake with strawberry jam. The tradition stems from times when Friday was a Catholic fast day so on Thursdays you needed to eat something that would keep you going for an extra day. Ingredients:
500 g dried peas |
150 g bacon |
1 small yellow onion |
1 1/2-2 liters vegetable stock |
white pepper |
dried basil |
Directions:
1. Steep peas in water overnight. Rinse. 2. Fry the onion and the bacon in a pan until onions are soft. 3. Add the peas and the vegetable stock. Simmer gently for about an hour, until the soup has started to thicken and the peas start to break up. Season. 4. Serve hot. |
