Pea Salad From British Ancestry |

This is an old Saxon recipe that is usually made for Christmas. Ingredients:
1 14 oz. can small english peas, drained |
2 hard boiled eggs, chopped |
1 small jar pimentos, drained and chopped |
2 - 3 sweet pickles, chopped |
3 tbsp. white onion or scallion, finely chopped |
1 celery rib, chopped |
2 slices old cheddar cheese or your favourite cheese, chopped |
salt and pepper to taste |
mayonnaise mixed with a splash of pickle juice |
note: for a larger crowd this recipe is easily doubled or tripled. |
Directions:
1. Drain peas and pimentos. 2. Combine all ingredients in a mixing bowl. 3. Add enough mayonnaise to hold ingredients together. 4. Chill for 2 hours. 5. If you don't like the addition of cheese it can easily be omitted. |
