This is a big hit in the summer at picnics.It's also great for a luncheon salad or even the main course for a light meal
Ingredients:
2 cans of peas, drained
2/3 c. shredded cheese
3 hard boiled eggs, peeled and diced
1/2 small onion, chopped or shredded
dressing
2 t. salad dressing (mayonnaise or whatever)
1/4 c. sugar
milk
Directions:
1. Mix salad dressing and sugar with enough milk together to make it smooth.
2. Let stand while mixing all other ingredients together.
3. Pour dressing over pea mixture and stir well.
4. Refrigerate until ready to use.
5. This travels well, and keeps for up to a week in the fridge.
6. VARIATIONS:
7. These variations make this even more wonderful.
8. I have even made it with both of these added, it is very good.
9. -You can add a can (or 2) of drained tuna
10. -You can add 1/2 a cantaloupe, diced small
