From a Better Crocker Summer Fun Appetizer booklet. The pea pods don't always roll easily, but they do make a pretty and tasty appy for summer parties. I didn't have the pre-packaged salmon cream cheese available and just used my food processor to blend some plain cream cheese with some smoked salmon. Ingredients:
6 ounces snow pea pods (fresh) |
1/3 cup salmon cream cheese spread |
1 -2 teaspoon fresh dill weed, chopped |
24 pieces red bell peppers or 24 pieces cucumbers or 24 pieces carrots (cut to 1/2-inch x 1/4-inch) or 24 pieces red onions (cut to 1/2-inch x 1/4-inch) |
Directions:
1. Heat 3 cups of water to boiling; add pea pods. 2. Cook uncovered 1 to 2 minutes, or until bright green. Drain. 3. Immediately rinse with cold water; drain. 4. Dry with paper towels. 5. Spread cream cheese over each pea pod. 6. Sprinkle with dill weed. 7. Place 1 piece of bell pepper on center of each pea pod; bring ends of pea pod over filling, overlapping in center. 8. Secure with toothpick. |
