Great on fish, especially looks lovely with salmon, but I also love it with arctic char. Ingredients:
2 cups frozen peas (tiny, tender) |
1/2 cup fresh basil |
2 cloves garlic, crushed |
1/2 cup parmesan, grated |
2 tbsp extra virgin olive oil |
1 freshly ground black pepper, to taste |
2 tbsp pine nuts, toasted |
Directions:
1. Defrost peas in the microwave. Combine warm peas and the rest of the ingredients in a blender or food processor, and blend until smooth and creamy. Add a bit of pasta water if the pesto is too thick. Add a little zest of lemon and lemon juice to taste. |
