Adapted from a friend, hers was a little bit heavy so I've made lighter version. If you like, you can add canned corn. But do not forget to drain well :) Enjoy! Ingredients:
1 1/2 cups shelled fresh peas |
1/2 cup cornmeal |
1 egg |
1 tablespoon yoghurt |
3 tablespoons milk (it's ok to use nonfat milk) |
1 garlic clove, minced |
2 tablespoons olive oil |
1/4 cup fresh mint, chopped |
1 teaspoon ground black pepper |
1 teaspoon salt |
red pepper flakes, to taste |
1 cup boiled water |
Directions:
1. In a medium sized pot, boil peas for 2 minutes and drain. Set aside. 2. In a large bowl, mix the yoghurt, milk, egg with spoon until smooth. 3. Stir in chopped garlic, black pepper, salt, red pepper flakes, and mint. 4. Add peas and stir. 5. Gradually add cornmeal, stir constantly so that the mixture does not get lumpy. 6. Heat 1 tablespoon of olive oil in a pan. 7. Drop tablespoonful of batter into the pan. 8. Flatten patty slightly with the back of a spoon. 9. Cook for about 3-4 minutes on each side. 10. Remove to a platter covered with paper toweling. 11. Continue until the batter ends. |
