This is my recipe for pea & ham soup. It's perfect for using up the rest of that Christmas ham! Ingredients:
1 ham bone, meaty |
500 g yellow split peas |
500 g split peas |
2 onions, finely diced |
1 large carrot, chopped |
1 bay leaf |
1 liter chicken stock |
salt |
pepper |
Directions:
1. Cover peas with plenty of water and let soak over night. 2. Drain well and rinse. 3. Place all ingredients into a large soup pot, and add enough water to cover. 4. Cook on low for 6-8 hours, stirring occasionally. 5. Remove the bone and bay leaf, and blend soup with a stick blender until smooth. |
