My grandmothers version of split pea soup. Guessing on the times as the recipe was told to me, but no times or servings. Ingredients:
2 cups split peas |
1 nice size ham bone with meat on it |
1 large onion |
1 tablespoon butter |
6 cups veggie stock |
3 large potato's, peeled and chopped |
salt and pepper to taste |
parsley (optional) |
sour cream (optional) |
Directions:
1. Pick through peas, remove any stones 2. Soak the peas as directed on the package 3. Chop the onion, and soften in a little butter over a low heat 4. Add the peas, potato's, stock and the ham bone 5. Cook gently until the peas are soft - about an hour 6. Remove the bone and strip off any meat. 7. This should be cut into small dice and reserved. 8. Puree the peas in a blender or with a stick blender 9. Add salt and pepper to taste 10. Add the reserved ham and serve with a dollop of sour cream and a sprinkling of chopped parsley on top. |
