From Nigella Lawson's Nigella Express episode On The Run Ingredients:
3 cups boiling water |
1/2 teaspoon kosher salt |
3 cups frozen peas |
1/2-1 teaspoon lime juice |
2 scallions |
4 tablespoons prepared basil pesto |
Directions:
1. Combine water, salt, peas, lime juice and scallions in a saucepan. Bring to a simmer and cook until peas are tender, 3-5 minutes. Remove scallions and discard. 2. Transfer soup to a blender. Add pesto and process until smooth. Serve hot. |
