It doesn't get much more decadent - bread pudding flavored with peanut butter and studded with chocolate. And it just so happens to be guilt-free! Go ahead and indulge... Ingredients:
4 slices light bread |
3 tbsp. semi-sweet mini chocolate chips |
1 1/3 cups light vanilla soymilk (like the kind by silk or 8th continent) |
1/3 cup fat-free liquid egg substitute (like egg beaters original) |
3 tbsp. reduced-fat peanut butter |
2 1/2 tbsp. brown sugar (not packed) |
dash salt |
optional topping: cool whip free or fat free reddi-wip |
Directions:
1. Preheat oven to 350 degrees. Spray a loaf pan with nonstick spray. 2. Lightly toast bread. Cut into 1/2-inch cubes, place in the pan, and sprinkle with chocolate chips. 3. In a blender, combine soymilk, egg substitute, peanut butter, brown sugar, and salt. Blend until smooth. 4. Pour mixture over bread cubes, making sure all the bread cubes are covered. Let stand for 5 minutes. 5. Bake until pudding is firm, 45 - 50 minutes. |
