The aroma of peanut butter permeated my whole house when I baked these! These bars taste just like biting into a dense peanut butter and jelly sandwich, minus the bread of course :-) Ingredients:
1/2 cup unsalted butter, room temperature |
3/4 cup granulated sugar |
1/2 teaspoon vanilla extract |
1 extra large egg (cage free), room temperature |
1 cup natural creamy peanut butter (like skippy) |
1 1/2 cups unbleached all-purpose flour |
1/2 teaspoon baking powder |
1/2 teaspoon kosher salt |
1 (10 oz) jar organic strawberry jam (you could easily substitute your favorite flavor) |
Directions:
1. Preheat oven to 350. 2. Cream your butter and your sugar. Add the egg, vanilla, and peanut butter. 3. Combine the flour, baking powder, and salt. Add to the butter mixture, and mix until just combined. 4. Spread 2/3 of the dough into a parchment lined, buttered 8x8 dish. Spread the strawberry preserves over the crust. Top the jam with crumbled pieces of the remaining dough. 5. Bake for about 25-30 minutes. |
