This recipe is handed down from a Medieval cookbook, namely the Harleian Manuscript. It is also called, in that book, Payn Pur-dew. Ingredients:
2 egg yolks, beaten |
2 slices white bread |
1 tablespoon butter or margarine |
dash salt (optional) |
1 teaspoon sugar |
Directions:
1. Cut the bread with a 4-inch round cutter, discarding the excess, along with the crusts. 2. Beat the egg yolks with the salt. 3. Dip the bread rounds in the beaten egg yolks, coating both sides of each slice. 4. Melt the butter in a pan. 5. Fry the bread slices until they are golden brown, about 2 to 3 minutes. 6. Flip the slices and cook the other side until it is also golden brown. 7. Take them up and sprinkle them with sugar. 8. Serve hot. |
