PawPaw would make these yummy eggs for Thanksgiving and Christmas. They are a little sweet and nothing fancy. Just the way the kids like them! Ingredients:
2 dozen eggs, (older ones peel better.) |
approx 3 tbls mayonnaise (hellmans) |
approx 2 tbls miracle whip |
approx 1/4 teaspoon french's mustard, (very little) |
2 or 3 tbls sweet pickle relish |
(these measurements are guesses. i do know that if you don't put any mustard in, they don't taste right. - even for mustard haters.) |
Directions:
1. Follow your cookbook's recommended method of hard boiling eggs. Let them cool. 2. Peel eggs and rinse under water to get off any egg shell bits. 3. Cut eggs in half length-wise. Put egg yolks in a mixing bowl. Set aside egg white sections for later. 4. Mash egg yolks, put in about 3 TBLS mayonnaise, 2 TBLS Miracle Whip, try 1/4 tsp mustard, 2 or 3 TBLS sweet pickle relish. Stir together. 5. Taste. Too dry, add a little more mayonaise or a little sweet pickle liquid. If it doesn't taste right, you may want to try just a little more mustard. 6. When flavor is to your liking, grab a spoon and start filling the egg halves. 7. If you want more color, you can sprinkle a little paprika on top of your stuffed eggs. 8. Refrigerate 12 hours or overnight. |
