All you need for this recipe is a mandolin or a good sharp knife and cutting board. I used a mandolin with the fine chopped attachment to make this: Ingredients:

4 large tomatoes, 3/4 of a large cucumber, 1 large purple onion and 2 tablespoons fresh minced garlic with about a cup of fresh cilantro added for good measure. |
Directions:
1. Just dice all the vegetables using the mandolin because it is so easy and fast and such a cool tool. Then wash the cilantro and break off the tips or cut with kitchen shears amounting to about 1 cup or so. You can vary all these ingredients depending on your food tastes. 2. Other additions which would be good: 3. Fresh pineapple chunks-without sugar adds a nice little sweetness but amazingly still goes with the savory ingredients. 4. Green, red or yellow bell peppers or a combination of all three-This adds crunch, color and texture as well as flavor to this versatile dish. 5. I like to add this to soups, salad as a replacement for some of the dressing-or even mixed in your Ranch Dressing! You can mix up to 1/2 Low Fat Ranch Dressing and 1/2 Paulette’s Fresh & Versatile Salsa. 6. It is a simple recipe but it turned out really good. It is good stirred into Lentil Soup-which I had. I'm sure it would be good to make rice with as well. 7. Bon Appétit! |
