The Lady's Cheesy Mac made heartier for Michael and the boys with ham and roasted red pepper. Ingredients:
2 cups smithfield ham, cooked and diced (any ham will work except smithfield country ham, which is too salty) |
4 cups elbow macaroni, cooked and drained |
2 cups grated cheddar cheese |
3 eggs, beaten |
3/4 cups sour cream |
4 tablespoons butter, cut into pieces |
1/2 teaspoons salt |
1 cup milk |
1 cup roasted red pepper, chopped |
Directions:
1. Preheat the oven to 350 degrees F. 2. While the pasta is still very hot combine pasta, cheese and ham into a large bowl. 3. In a separate bowl combine the eggs, sour cream, butter, salt and milk. 4. Stir into the macaroni mixture. 5. Lastly, fold in the roasted red pepper. 6. Pour mixture into a prepared casserole dish and bake for 30-45 minutes. 7. Top with additional cheese if desired. |
