This is the best Baked Potato soup I've ever had. The only thing I did differently was I did not add all the bacon to the soup and used some for garnish. So simple to make and loved by all. Paula's recipe, my photo. Ingredients:
8 slices bacon |
1 onion, diced |
1/2 cup flour |
3 (14.5 oz.) cans chicken broth |
5 potatoes, baked, peeled and diced |
1 teaspoon dried parsley flakes |
2 cups half & half |
1 cup sharp cheddar cheese, grated |
1 cup sour cream |
salt & pepper to taste |

Directions:
1. In a Dutch oven cook bacon until crisp 2. Remove and crumble, reserving drippings 3. Saute onion in bacon drippings until tender 4. Add salt and pepper 5. Stir in flour and cook for one minute, stirring constantly 6. Slowly add chicken broth; cook, stirring constantly until thick and bubbly Add potatoes, parsley and half & half; cook for 10 minutes 7. Stir in cheese and sour cream. 8. Garnish with cheese, bacon, chives and sour cream. |
