Hearty comfort food for 4, 1 skillet, under 30 minutes. Ingredients:
1 lb ground beef, drained |
15 1/4 oz sweet corn |
3/4 cup minute rice |
10 oz diced tomatoes and green chilies |
10 oz enchilada sauce |
2 1/4 oz sliced black olives |
1/2 cup diced tomatoes |
1/2 med onion diced |
1/2 bell pepper |
1/2 tsp garlic powder |
1 tbs chili powder |
1/2 tsp salt |
1 tsp cilantro |
1/2 tsp cumin |
1/2 tsp red pepper flakes |
Directions:
1. Brown ground beef in skillet over medium heat. 2. Drain excess fat. 3. Return meat to skillet, add spices (too your own taste). 4. Add fresh veggies. 5. Add entire cans (product & liquids) of Sweet corn, Original Rotel, enchilada sauce and olives. 6. Add uncooked Minute Rice 7. Cover and simmer for 10 minutes stirring occassionally. 8. May add additional water if needed. |
