This recipe makes mashed potatoes a little more dressed up for a special meal. This is a standard for Thanksgiving and Christmas dinner for our family. It is great with gravy or not. Ingredients:
3 cups cottage cheese (small curd) |
6 meduim-size potatoes, cooked and mashed |
3/4 cup sour cream |
4 teaspoons salt |
1 1/2 tablespoons finely grated onion |
1/8 teaspoon white pepper |
melted butter |
1/2 cup chopped toasted almonds (optional) |
Directions:
1. Beat Cottage Cheese until slightly smooth. 2. Blend in mashed potatoes. 3. Add sour cream, salt, onion and pepper and mix well. 4. Spoon into well-buttered, shallow 2 quart casserole. 5. Brush potato mixture with melted butter. 6. Bake in 350 degree oven for 30 minutes. 7. Place under broiler until brown, about 4 minutes. 8. Sprinkle with almonds. |
