This is a recipe I've had for a long time..I got it out of a ladies magazine. The apples set it apart from any other rice dish. Ive made this several times... The ladies at work loved it.. Ingredients:
3 tablespoons butter or margarine |
1 cup sliced celery |
1 cup chopped onion |
3/4 cup chopped carrots |
3/4 cup chopped green pepper |
1 cup chopped unpared tart red apple |
1 cup sliced mushrooms |
1 pkg (6.25 oz) long-grain and wild rice mix |
1 can (10 1/2 oz) condensed chicken broth |
1/4 cup toasted slivered almonds |
Directions:
1. In a large skillet over medium-high heat, melt butter. Add celery, onion, carrot, and green pepper; saute until carrot is tender; about 8 minutes. 2. Add apple and mushrooms; saute 2 minutes longer. 3. Add rice from mix; toss to combine. 4. Stir in seasoning from rice mix. 5. In glass measure, combine chicken broth with enough water to make 2 cups; stir into rice mixture. 6. Bring to boiling; cover. Simmer until broth is absorbed, about 10 minutes. 7. Add almonds; toss to combine. 8. Serve immediately |
