PATATAS A LO POBRE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Richardson, Texas in 2006. Ingredients:
4 large potatoes thinly sliced |
1 green pepper roughly chopped |
1 white onion roughly chopped |
2 cups extra virgin olive oil |
1 teaspoon salt |
Directions:
1. Heat oil in large deep frying pan then add potatoes and season with salt. 2. Fry on high heat 5 minutes turning potatoes over then turn heat down. 3. Put lid on pan and gently fry for 10 minutes then add green pepper and onion then stir well. 4. Cover pan and fry 10 more minutes. |
