Good recipes from the former first lady! Ingredients:
8 oz nonfat plain yogurt |
2 tbsp thawed orange juice concentrate |
2 tbsp mint leaves |
1 tbsp honey |
1 small head of iceberg lettuce cut into 8 wedges |
1 small can mandarin oranges, drained |
6 fresh peaches, halved and pits removed |
1 pint fresh strawberries, sliced in half |
1 cantaloupe (seeded, sliced, and rind removed) |
1/2 cup shelled and chopped pistachios |
combine yogurt, orange juice, honey, and mint for dressing. |
Directions:
1. To assemble salad, on individual serving plates place a wedge of lettuce on each plate. Place remaining fruit over lettuce wedges on each plate. Drizzle dressing on top or serve to the side. |
