A perfect filling for puff pastry, cream puffs, donuts. Ingredients:
1 quart whole milk |
lemon, zest of |
1 cinnamon stick |
1 cup sugar |
4 eggs |
2 cups flour |
1 teaspoon vanilla |
Directions:
1. Heat milk, lemon zest and cinnamon in a larger saucepan until very hot, but not boiling. 2. Meanwhile, mix sugar, eggs, flour and vanilla in a mixing bowl until well combined. 3. When the milk is quite hot, temper the flour mixture with a bit of milk, and then add it all back into the saucepan. 4. Whisk constantly over medium heat until thickened. |
