Greekgirl told me about a recipe for Pastitcio. I made it with my son's girlfriend over the weekend. We had so much fun and it came out great. Took some time to prep but like Notyourmomma said to me the other day, it truly was a labor of love. Ingredients:

1 1/2 lb. ground beef or lamb (i used beef) |
1 lg.onion, diced |
1 tsp. rosemary, dried |
2 bay leaves |
2 cloves garlic, grated |
1/4 cup tomato paste combined with 1 1/4 cups water |
1/4 cup white wine |
olive oil |
salt and pepper to taste |
pasta |
1 lb. greek #2 pasta or bucatini (i used bucatini) |
2 tbls. olive oil |
3 egg whites, beaten (save the yolks for the sauce) |
1/2 cup kefalotyri or parmesan cheese ( i couldn't find kefalotyri so used a good parmigiano reggiano) |
sauce |
4 cups hot milk |
1 cup flour |
3/4 cup cheese (again i used the parm) |
1 stick butter |
3 egg yolks, beaten |
1 tsp. nutmeg, ground |
1/2 tsp. white pepper |
Directions:
1. Meat 2. In large skillet, add olive oil and being to medium heat 3. Add onions and cook until tender 4. Add ground meat, break up and cook until done 5. Add rosemary, garlic, wine, tomato mixture, salt and pepper 6. Bring to boil combining all ingredients 7. Add bay leaves and submerge into mixture 8. Reduce to simmer and add lid 9. Simmer 30 minutes, stirring often 10. Remove bay leaves and set aside 11. Pasta 12. Cook pasta according to package directions but only until al dente 13. When pasta is done, drain and put back into pot 14. Add olive oil and combine 15. Let cool for a few minutes 16. Add beaten egg whites and cheese and mix to combine 17. Set aside 18. Sauce 19. Melt butter in large saucepan over medium heat 20. Add flour slowly, whisking to combine 21. Slowly add milk, whisking until combined 22. Remove from heat and add nutmeg, cheese and pepper 23. Whisk until completely combined 24. Assemble 25. Coat 2 1/2 qt. baking dish with olive oil 26. Add 2/3 pasta making sure not to leave empty spaces 27. Spread meat evenly over pasta 28. Top with remaining pasta 29. Pour sauce over pasta and evenly spread 30. Bake in preheated 350 oven, uncovered 31. Rest 30 minutes |
