This is a very simple and easy potato side dish. A simple yogurt dressing adorns this intriguing hot salad. It goes well with BBQ'd meat. Ingredients:
1 pound potatoes, peeled and cut into 1 inch cubes |
1/4 cup olive oil |
1 teaspoon salt |
1/2 teaspoon ground black pepper |
1 cup plain yogurt |
1/3 cup mayonnaise |
Directions:
1. Preheat the oven to 425 degrees F (220 degrees C). 2. In a medium bowl, toss potatoes with olive oil to coat, and place in a shallow roasting pan or baking dish. Season with salt and pepper. 3. Bake for 1 hour, or until golden brown and tender. Remove from the oven, and transfer potatoes to a large bowl. Stir in yogurt and mayonnaise to coat. Serve immediately. |
