A nice vegetarian lasagna! Ingredients:
1 (8 ounce) package mushrooms |
4 ripe plantains |
6 eggs |
1 bunch fresh scallions |
1 medium red pepper |
1 medium yellow pepper |
adobo seasoning, to taste |
oregano, to taste |
salt, to taste |
cumin, to taste |
1 packet goya sazon goya |
1 teaspoon capers |
2 teaspoons pimento stuffed olives, chopped |
1 medium onion |
4 cloves garlic |
1/2 cup tomato paste |
cheddar cheese, shredded |
mozzarella cheese, shredded |
Directions:
1. Sautee all vegetables and seasoning. 2. Slice plantains; fry plantain slices. 3. Mix 3 eggs with Adobo. 4. Pour into bottom of lasagna dish. 5. Place one layers of plantains in bottom, then cheese, then veggie mix, then cheese, then plantains. 6. Mix 3 eggs with Adobo. 7. Pour on top of the other layers in the lasagna dish. 8. Bake at 350 degrees for 25 minutes or until eggs/top is browned. |
