PASTEL DE NAVIDAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Morgan Estate in Austin, Texas in 1982. Ingredients:
pastry sufficient for 1 pie shell |
5 eggs |
2/3 cup granulated sugar |
5 tablespoons butter melted |
1/4 teaspoon salt |
i teaspoon vanilla |
1 cup chopped walnuts |
2/3 cup raisins |
Directions:
1. Preheat oven to 375. 2. Roll pastry thin and cut into 4” circles. 3. Fit each round into muffin cup and press in gently. 4. Beat eggs until they are light then add sugar and mix well. 5. Add butter, salt and vanilla then mix well. 6. Combine walnuts and raisins and fill each cup 1/2 full. 7. Add egg mixture to fill each cup three-quarters then bake for 25 minutes. |
