An easy vegetarian meal that is quick to put together with frozen or canned marinara sauce. Store-bought roasted peppers can be used for extra convenience. Ingredients:
8 ounces spaghetti |
2 cups marinara sauce |
2 peppers, cored |
1 onion, sliced |
8 ounces part-skim mozzarella |
Directions:
1. Cook spaghetti according to package directions. 2. Roast peppers and onions under broiler until they are slightly blackened (onions will likely need to be removed before peppers). This takes about 8 minutes. 3. Put peppers in a bowl covered in plastic wrap for ten minutes. This makes them easier to peel. Cut them into the desired size. 4. Heat marinara sauce. 5. Combine all. |
